Roasted prime rib and truffle cheeseburger bap
Ingredients:
- 1 (5-6 lb) prime rib roast
- 2 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp black pepper
- 2 cloves of garlic, minced
- 2 tbsp truffle oil
- 12-15 small dinner rolls or baps
- 1 tbsp chopped fresh parsley (optional)
Instructions:
- Preheat your oven to 230°C or 450°F.
- Remove the prime rib roast from the fridge and allow it to come to room temperature for about 1 hour.
- In a small bowl, mix together the olive oil, kosher salt, black pepper, and minced garlic. Rub the mixture all over the prime rib roast.
- Place the roast on a wire rack in a roasting pan, and put it in the preheated oven. Roast for 15 minutes, then reduce the temperature to 180°C or 350°F and continue roasting for 1 hour for medium-rare or 1 hour and 15 minutes for medium.
- Remove the roast from the oven and let it rest for 15 minutes before slicing.
- While the roast is resting, split the dinner rolls or baps in half and brush with truffle oil. Place them on a baking sheet and put them in the oven for the last 5-10 minutes of the roasting time to toast.
- Once done, remove the dinner rolls or baps from the oven and let them cool slightly.
- Slice the prime rib roast and serve it on the dinner rolls or baps, topped with chopped parsley if desired.
