Here’s a classic recipe for Salad Niçoise:
Ingredients:
- 3 baby gem lettuce ripped into pieces
- 6 eggs (boiled)
- 3 tins of Tuna in sunflower oil
- 1 tin of anchovy
- 1 cup cherry tomatoes, halved
- 1/2 cup pitted black olives
- 1/4 cup capers, drained
- 1/4 cup fresh parsley, chopped
- 1/4 cup red onion, thinly sliced
- 2 red peppers baked in the oven
For the dressing:
- 6 tbs Good mayonnaise
- mixed herbs
Instructions:
- Break your baby gems into a serving dish.
- Sprinkle the flaked Tuna over the top
- chop the anchovy and spread it around evenly
- Finally, slice the red onion and distribute them evenly over the Tuna
- Cut the boiled eggs into quarters and place them evenly in the dish
- Sprinkle the capers and olives all over
- place a dollop of the mayonnaise & mixed herbs all around
- Skin and slice the red peppers and garnish the dish
- Serve the Salad Niçoise immediately and enjoy!
