Lambs Liver & Bacon is one of my many favorite dishes add the onion gravy, mashed potatoes, and stem Broccoli to make the perfect winter warmer. This liver and bacon recipe is simple and quick also a very cheap meal to produce. Home cooking at its best using traditional simple ingredients like bisto gravy granules, vegetable oil, stem broccoli also known as Broccoli spears, and mashed potatoes. Today I am cooking at home but I have cooked this recipe in pubs and restaurants on a professional basis with great feedback from customers. I hope you enjoy this recipe.
For this dish you could use calf liver or pig liver but my preferred choice is lamb liver, I find it has a more delicate texture and taste. Mixed with bacon gravy and mashed potato all the elements of this dish come together to create a perfect meal.

Ingredients
Sliced lambs Liver x 1lb
Smoked Bacon x 2 rashers
Garden peas x 2 portions
Onion x 1
Potatoes x 2 lb
Stem Broccoli x 8 stems
gravy granules x 2 tbl
Butter x 1 tbl
Procedure
- Peel and slice your potatoes, put them in a saucepan, cover with water and place on the stove to boil
- Trim the stem Broccoli and Blanche in Boiling water for 1 minute, remove and refresh in ice water. Keep the water to make the gravy.
- Pan-fry the Bacon to golden brown a place on a baking tray
- Pan fry the sliced Onion in the same pan with thebacon juices until golden brown then place on the baking tray
- Pan-fry the stem Broccoli and place it on the baking tray.

6) Strain the cooked potatoes and mash with some butter seasoning and a drop of Milk.
7) Add the gravy Granules to the Broccoli water and leave to simmer
8) Pan fry the Lambs liver light golden brown on the outside and pink in the middle. DO NOT OVERCOOK.
9) Flash the tray of cooked ingredients under a hot grill for 45 seconds to make it hot.
10) Prepare all the cooked ingredients on a hot plate and serve
