What food must you have at any BBQ? If you want to host the perfect garden party BBQ in 2021 you need to start preparing now. We are in for a hot hot summer and it is just around the corner, dont be caught by surprise and un-prepared.

The wonderful smell of smoke billowing from the burning coals of a BBQ, on a bright sunny day is enough to put a smile on anyone’s face. In this blog I would like to show you some of the BBQ must-have foods, some secret tricks and recipes I have never shown anybody, and a basic set up for a BBQ party. The fun starts from the moment you decide to have a BBQ. Whatever the occasion, a BBQ always goes down well.

NOW THE IMPORTANT PART

What shall we cook? The best policy in my experience is to keep it simple and organized. Like it or not you are on stage and the last thing you want is for your happy guests to see you panicking. write a list of all the food you are going to serve, do all the shopping 2 days before your party and spend the whole day before the event preparing everything. Yes, you could just get some cheap burgers and sausages a few bread rolls and some ketchup and be done with it.

But do not be surprised if halfway through the party most of your guests have either left or asked if they can order pizza delivery to your house.

Host the perfect BBQ

To give you an idea, here is an amazingly simple but inspiring menu that your guests will talk about every time they see you.

Menu

Sirloin steak (or whatever steak you prefer)

Fresh chicken (thighs and drumsticks)

Pork loin (sliced into steaks)

Sausages & burgers (good quality)

salads: Potato salad, Coleslaw, Tossed cucumber tomato, and sweet pepper.

choice of desserts:  jelly and custard trifle, chocolate cake.

Why is BBQ food preparation and storage important?

Most BBQ garden parties, or events take place during the summer months. This means the weather is hot and great for outdoor entertainment. Food does not last long when left in warm or hot environments, so particular attention should be adhered to keeping food refrigerated as much as possible.

storing the prepared raw food in a cool place (preferably a refrigerator) prior to cooking, will prevent your food from spoiling and in worse case scenario giving someone a nasty bought of food poisoning.

The day before,

  • Cut the steaks in half and put them in the fridge.
  • (do not season or marinate them yet).marinate the chicken thighs with fresh chopped garlic, grated ginger, olive oil. and fresh herbs.
  • Slice the pork loins into steaks and put them in the fridge.
  • make the potato salad and put it in the fridge.
  • make this secret coating sauce,

How to make a sticky BBQ sauce from scratch

ingredients:

Tomato Ketchup: small bottle

HP sauce: small bottle

Brown sugar: 10oz

English mustard 4 tsp

Clear honey: 5tbsp

 

Mix all the ingredients together in a glass bowl, leave in the fridge over night. Keep covered.

What is the best charcoal for a bbq ?

It is always best to use 2 types of charcoal when you are cooking on a BBQ. 

The first is Lump wood charcoal, this softer fast-burning charcoal is what you use when lighting the fire, it is also perfect for that smoky BBQ flavour when you cook the food. Unfortunately, it does burn quickly and the last thing you want is to run out of charcoal.

The second type of charcoal is Briquettes. These are normally round balls of charcoal made of much denser wood hence giving them a much longer burning time. They don’t give off as much smoke as lump wood charcoal and it is not advisable to try and start the fire using briquettes, however, mixed with the lump wood you have the perfect combination, longer burning BBQ with that wonderful smoky BBQ smell.

These are just a few of the questions you need to ask yourself before you buy your BBQ. If you have a busy lifestyle and just want to come home from work and have a BBQ then a gas one is ideal as it is as simple as turning a cooker on, but you won’t get that charcoal flavour. If you are planning an all-day party and you have time to make a day of it, then loading up a charcoal BBQ just adds to the fun and gives you that Real BBQ smoky atmosphere.

If you are keeping your BBQ outside when not in use I recommend getting a cover for it to stop it getting rusty from the rain.

Best way to light a charcoal BBQ fire

Make sure the air vents are open on the side or at the bottom of the BBQ to allow the air to get to the coals.

In the bottom of the barbeque add some scrunched up newspaper or old paper, get some cardboard can be an old box just rip it up. and some firelighter Cubes if you have them. Next put up one layer of lump wood charcoal on top of the paper. Light the paper in about 3 different places and leave it to burn (don’t play with it).

As soon as the lump wood begins to catch you add a layer of charcoal briquettes on top. Leave it to burn for about 1 hour before cooking on it. Make sure you take off the grill whist organising the coals.

You could also use a charcoal chimney. This fantastic tool is so easy to light because of its chimney design, fill it with charcoal light the paper or firelighters underneath it, and off it goes. Empty the burning coals into the BBQ as soon as they catch alight.

Once the coals are alight close the air vents to stop it burning too fast and help it settle.

These are just some ideas.

Is it safe to use a disposable BBQ to cook a steak well done?

A disposable BBQ is as safe as the person using it. There is a difference between a well-done steak and a burnt steak. As far as cooking a steak well done, I personally don’t understand why someone would want to ruin a perfectly good bit of meat. (comments below please)

Mouthwatering, Sizzling, Barbecued Steaks

On the day

Take all the meat out of the fridge and leave in a cool place about 2 hours before cooking

Slice cut and mix all your ingredients for your tossed salad about an hour before you light the BBQ and leave in the fridge.

set up a table for your desserts, salads, plates, and cutlery.

These may come in handy

set up a table beside the BBQ for your cooking utensils, and all your meat. also have a clean tray ready to put your cooked meat in when it is ready. Use an umbrella to keep the sun off the food and don’t forget to have a light handy for when it gets dark.

If you are using a charcoal BBQ light it an hour before you start cooking, this will give the flames time to settle. The coals need to be burning cinders and not gushing out flames. Make sure the cooking mesh is not sitting too close to the coals.

Lets get cooking

The BBQ is ready, and your guests are starting to get hungry. The art of great barbecuing is cooking fast without burning, this takes practice of moving the meat around using different hotspots. 

How do you grill perfectly on a home made bbq?

Put the chicken drumsticks and thighs on a tray in a preheated oven at the same time you light the BBQ, when the coals are ready to start cooking on put some olive oil, garlic, and fresh herbs on the steaks and put a few on the BBQ. Take the part cooked chicken from the oven and start cooking it with some sausages and burgers too.

Using a brush made of fresh rosemary, brush some oil on the steaks and sprinkle with rock salt and fresh ground pepper from a pepper grinder. As the meat begins to cook the juices from it will cause the flames to appear, this is normal and the art of a good BBQ chef is to juggle the meat around to cooler spots without flames or raise the cooking mesh.

Do not just put everything on the BBQ and leave it to cook on its own, it will be burnt, and you will of wasted your time. Keep turning the meat using BBQ tongs as it browns. Just before you take the meat off sprinkle some fresh rosemary over the BBQ, some will fall into the coals giving off a fantastic aroma and adding to the already wonderful flavour. Brush the pork and chicken drumsticks with some special sauce you made earlier then remove the cooked meat onto a clean tray and serve.

This is a very basic set up and checklist for getting your BBQ going, there is no end of marinades, meat, fish vegetables you can use, be adventurous but most of all enjoy it.

Where is the BBQ capital of the world?

Anyone you ask, no matter what part of the world they come from, even the ones from countries that don’t even have BBQs, will tell you they do the best barbecue, that is mainly because different cultures have different tastes, for example, you would not Impress a Brazillian with an Australian bbq because it wouldn’t involve Caipirinha, And visa versa.

There is no real answer to this question as it all boils down to personal preference considering many factors, the atmosphere, the food, the people, the entertainment, and the list goes on. at the end of the day, a party is what you make it.

Brazillian BBQ. South American Gaucho.

Credit where its due, the Brazilians do know how to party, and their BBQs in my book are top ranking.
Known as a churrasco, the traditional Brazillian barbecue is made by building a small square brick BBQ and burning wood logs in it, Gaucho style. Most of their meat is skewered and seasoned with garlic and herbs. Well known for their fantastic Beef, the most commonly used part is picanha. This cut is taken from within the rump and has to be my favourite steak. the only seasoning this fine cut of meat requires is a sprinkling of rock salt, and dipped in farofa anything else would be total disrespect as it has such a fantastic flavour of its own. The old saying, nothing added and nothing taken away.

Finally, No Brazillian BBq would be complete without Their famous salsicha sausage, slow-cooked Beef short rib, Feijoada, Chumahon, caipirinha made with only the finest cashaca all topped off with some of that fine sexy south American Samba dancing to the likes of Bruno e Mahoney to la lambada.

What is the difference between a BBQ and a South African braai?

The wilderness of this fantastic country and the hot weather are just some of the attractions of this amazing place. The years of mixed cultures merging into one, make this a true culinary adventure.

This is a tricky one, and I need to tread carefully on what I say here as the south Africans take their braaing as serious as their rugby. A braai is a South African BBQ, even though they will emphatically deny it is a BBQ and will be truly insulted if you call it a BBQ.

That said, in my experience, apart from braaibroodjies, Potato bakes and corn on the cob, the main ingredients are meat, meat, and more meat, including Buffalo, Antelope and many other varietis of wild animals, with the occasional boerewors ( traditional sausage ) chucked on for good measure and of course copious amounts of drinking that Continues even when the food is all gone. It is sometimes questioned as to whether or not a Braai is just a good excuse for a pissup, And wow can they drink.

There are certain rules, however. The coals remain burning even after the food has gone and the braair ( the person cooking the food ) is in charge and any backseat braaing is unacceptable. 

What is a traditional Australian Barbecue or Barbie?

A destination on most peoples bucket list. With all its trials and tribulations, Australia is becoming a sort after destination, not only for its vibrant culture and landscape, but also for its fast-growing food reputation

Chuck a prawn on the barbie, or is it a shrimp ?.
One thing is for certain, with such an abundance of natural fresh ingredients all around, it would be sacrilege not to make good use of it, and the Australians certainly do. The days of rummaging for Witchetty grubs and yabbies seem to be well gone. But the traditional Barbie has become ever more popular with so much more variety of foods being taken advantage of. Although the traditional barbie is generally meat, It is not unusual in this day and age to see an Aussie barbie laden with seafood. they are after all surrounded by sea.
Emu, Crockadile and kangaroo meat are also common contestants although Kangaroo tends to be more on the pet food shelf in the supermarkets these days.
An Aussie barbie is truly an event not to be missed, like most BBQs it is a fantastic time for friends and family to get together and party.

What makes a good garden party barbecue?

Common sense prevails. Garden parties are great fun, the addition of a barbecue just adds to the occasion. What makes a good garden party barbecue? This can depend on several contributing factors. Good company, Good food, good atmosphere are the key factors. Organisation to make sure you have all these elements in place will be down to you and good planning. Although they say the best parties are the unplanned ones, celebration parties and barbecues do need some planning.
