Baked Feta Cheese Cherry Tomato & Pesto Puff Pastry Tart
Recipe for Feta cheese & cherry tomato tart
Ingredients:
- 1 sheet puff pastry
- 1 egg, beaten
- 4 oz feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper, to taste
- Fresh basil, chopped (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- Unfold the puff pastry sheet onto a lightly floured surface and roll it out slightly.
- Cut the pastry sheet into 4 equal pieces and place them onto a baking sheet lined with parchment paper.
- Use a fork to prick the pastry all over, leaving a 1/2-inch border around the edges.
- Brush the beaten egg over the edges of the pastry.
- In a bowl, mix together the crumbled feta cheese, cherry tomatoes, sliced red onion, olive oil, dried oregano, salt, and pepper.
- Divide the mixture evenly among the pastry pieces, spreading it out to the edges.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
- Garnish with fresh basil, if desired.
- Serve warm or at room temperature. Enjoy!
