Baked Feta Cheese Cherry Tomato & Pesto Puff Pastry Tart

Recipe for Feta cheese & cherry tomato tart

Ingredients:

  • 1 sheet puff pastry
  • 1 egg, beaten
  • 4 oz feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh basil, chopped (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Unfold the puff pastry sheet onto a lightly floured surface and roll it out slightly.
  3. Cut the pastry sheet into 4 equal pieces and place them onto a baking sheet lined with parchment paper.
  4. Use a fork to prick the pastry all over, leaving a 1/2-inch border around the edges.
  5. Brush the beaten egg over the edges of the pastry.
  6. In a bowl, mix together the crumbled feta cheese, cherry tomatoes, sliced red onion, olive oil, dried oregano, salt, and pepper.
  7. Divide the mixture evenly among the pastry pieces, spreading it out to the edges.
  8. Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
  9. Garnish with fresh basil, if desired.
  10. Serve warm or at room temperature. Enjoy!
