There are many different levels of chefs within the main levels and this will depend on the size of the business or kitchen. For example, you could have an executive sous chef or an assistant head chef but for the sake of not getting too complicated in this post we are going to stick to the main structure of chefs levels in a standard kitchen

Executive chef

Executive Chef: The executive chef normally becomes involved when a company or business has more than 1 kitchen. The executive chef is the top-level chef in charge of overseeing a group of kitchens. generally helping with menu planning, recipe development, ingredient sourcing, and managing the kitchen staff. They are responsible for ensuring that the food is of high quality and meets the standards of the restaurant.

Head chef

The head chef is in charge of the kitchen, again depending on the size of the kitchen will decide whether the head chef is hands-on with food preparation and cooking or takes a back seat in organizing staff rotas, ingredients orders, health and safety checks, and the list goes on.

Sous Chef

The sous chef is the second in command in the kitchen. They work closely with the head chef and are responsible for managing the kitchen staff, creating schedules, and ensuring that all dishes are prepared on time and to the restaurant’s standards. They also assist with menu planning and recipe development.

Chef de partie

The chef de partie (cuisine) is responsible for the day-to-day operations of the kitchen. They oversee the preparation and cooking of dishes and ensure that all equipment is working correctly. They also train and manage the kitchen staff and ensure that all food is of high quality.

Line chef

Line chefs can be found in mainly larger kitchens and their role (as the title suggests) is normally working in line with other chefs supplying a chef de partie with prepared ingredients or cooked food items prepared for plate service and are responsible for ensuring that their dishes are prepared to the restaurant’s standards. They may also be responsible for preparing ingredients and cleaning their workstations.

Commis chef

Prep cooks are responsible for preparing ingredients and performing other tasks to help the line cooks. They may chop vegetables, measure ingredients, and prepare sauces and other components of dishes.

Kitchen porter

Although a kitchen porter is not regarded as a chef, they play a very important role in keeping the kitchen supplied with clean plates pots, and pans and sometimes get involved with veg preparation such as potato peeling. I have seen many kitchens brought to their knees due to not having a kitchen porter. Many great chefs have started their careers as kitchen porters and worked their way up the ranks. (including me)
